Cut the potatoes, ham, bell pepper and onion.
In a large pan (with a lid), add olive oil and bring to temperature on medium heat.
Add the diced potatoes, seasoned salt and pepper. Stir and cover. Let cook for about 10 minutes covered stirring occasionally.
Once the potatoes have started to soften but have not fully cooked, add the ham, bell pepper and onion. Cover and cook for 5-7 minutes stirring occasionally.
Crack eggs directly into the pan spacing them so that they do not overlap. Cover and cook for 5 minutes. You can cook longer if you want the yolk to be fully cooked.
