Easy recipe for loaded baked potato skins. These potato skins are topped with bacon, cheese, chives and sour cream and the perfect appetizer for any party.

Baked Potato Skins

  • 4 Potatoes
  • 2 tbsp Olive Oil
  • 1 tsp Sea Salt
  • 2 tbsp Butter
  • 1 Cup Cheddar Cheese
  • 1/2 lb Bacon
  • Chives
  • Sour Cream


  1. Preheat oven to 400 degrees F.  Bake your potatoes first just like you would make traditional baked potatoes. Baking them at 400 degrees should take 40-60 minutes depending on the size of the potatoes and your oven.  

  2. Cook the bacon and then cut it into small pieces. I used turkey bacon for this recipe but any bacon would work.

  3. Let the potatoes cool.  Once they are cool enough to handle, cut them in half and scoop out some of the inside.  Then place them on a baking sheet.  

  4. Add butter to each of the halves and bake at 400 degrees for a few minutes until the butter is melted.  Once the butter has melted take the potatoes out and brush the butter over the top so that it evenly covers the potato surface.  

  5. Add bacon and cheese to each potato half and bake at 400 degrees for 10-15 minutes (Until the cheese has melted)

  6. Top the potatoes with Chives and sour cream (or serve sour cream on the side)
