mediterranean rice

Recipe for a delicious Mediterranean basmati rice.  This side dish is packed with flavor and topped with almonds, dried fruit and fresh herbs.

Ingredients: - 2 cups basmati rice - 3 cups chicken broth - 1 TBSP olive oil - 1 tsp turmeric - 1 tsp cumin - 1/2 tsp cinnamon - 1/4 tsp black pepper - 1 tsp salt - 3 cloves garlic - 1/2 medium onion - 1/8 cup fresh herbs - 1/4 cup dried fruit - 1/4 cup sliced almonds

Step 1 - Sautee Onions Pour olive oil into medium pan.  Then add onions and sauté for 3 -5 minutes.

Step 2 - Add the spices  Add garlic, turmeric, cumin, salt, cinnamon and pepper.

Step 3 - Add the rice  Add the rice and stir until it is mixed well.  All of the rice should be yellow.

Step 4 - Add the liquid Add 3 cups of chicken broth to the rice and stir.

Step 5 - Bring to a boil, then simmer.  Bring the rice to a boil. Then lower the temperature to a simmer and cook with the lid on for 15-20 minutes.

Step 6 - Add Toppings Once rice is fully cooked, add dried fruit, sliced almonds and fresh herbs.  Then fluff with a fork.
