Gluten Free Blackberry Muffin Recipe

Follow this simple recipe to make delicious gluten free blackberry muffins. You would never know that these are gluten free. They taste amazing and have the perfect texture.

Ingredients: - 12 oz blackberries - 1/2 cup vegetable oil - 1/4 cup milk - 1 tsp vanilla extract - 1/2 cup sugar - 1 egg - 1 cup gluten free flour - 1/4 tsp baking soda - 1 tsp baking powder - 1/2 tsp cinnamon - 1/2 tsp salt

Step 1 Preheat Oven to 350 Degrees F

Step 2  In a small bowl, mash blackberries.

Step 3 In a large bowl, beat oil, milk, vanilla, sugar and egg until combined.

Step 4 Add flour, baking soda, baking powder, cinnamon and salt.  Mix until combined.

Step 5 Add the mashed blackberries and fold into the mixture.

Step 6 Pour the mixture into a prepared muffin tin and top each muffin with a little extra sugar and berries.

Step 7 Bake muffins for 25-30 Minutes.
