I’ve established quite an herb garden this summer and I’m doing my best to try out new recipes that utilize my abundance of greens. It was time to trim down my cilantro plant so I came up with a cilantro lime grilled chicken recipe last week and my husband loved it so much that he insisted I make it again and post the recipe on the blog. This cilantro lime grilled chicken is so freaking good! It’s even better that it’s a super simple recipe that takes very little time to make and doesn’t dirty a ton of dishes during the prep.

Ingredients
1 – 1.5 lbs Boneless Skinless Chicken Breast
2 Tbsp Olive Oil
2 Limes
2 Garlic Cloves
1/2 tsp Salt
1/2 tsp Cumin
1/2 tsp Pepper
1/8 cup Cilantro

Helpful Kitchen Utensils for this Recipe
For this recipe I used two kitchen utensils that I honestly can’t remember what life is like without. First is my garlic press. While chopping garlic isn’t difficult, I love using the garlic press
because the pieces are consistent and it squeezes out more flavor (at least in my opinion). The second utensil that I love is my zester
. I used to try and zest fruit using a cheese grater because it’s all that I had but this zester
is so much easier.
Cilantro Lime Chicken Marinade
I really simplified this recipe so that it was something I could make quickly. I also didn’t want to dirty a bunch of dishes. We all hate dishes right?!?! I just mixed the ingredients in a small bowl, added the chicken and then let it sit in the refrigerator for at least an hour. The first time I made it, the chicken marinated for just over an hour. The second time it marinated for about 2.5 hours. I noticed a very slight difference in taste (the longer marinated batch was a tiny bit more flavorful) but it wasn’t significant.
You’ll want to let the grill get very hot before you put the chicken on. We always eat organic meat so the chicken breasts tend to be smaller (no fillers). On a 500 degree grill they took just under 15 minutes with my husband flipping them one time.
I garnished the chicken with some additional cilantro leaves and lime wedges.

Cilantro Lime Chicken
Ingredients
- 1 - 1.5 lbs Boneless Skinless Chicken Breast
- 2 TBSP Olive Oil
- Zest from 1/2 a lime
- Juice From one lime
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 2 Cloves garlic
Garnish
- 1 Lime cut into wedges
- 1 Cilantro
Instructions
In a medium bowl add the olive oil, zest from 1/2 a lime and juice from one lime together and stir.
Use a garlic press (or chop the garlic) and add two cloves of garlic to the mixture.
Add the dry spices (cumin, salt and black pepper).
Finally, add 3/4 of the cilantro (save a little for garnishing the chicken later). Mix all of the ingredients together in the bowl.
Add the chicken breast to the bowl. Mix the chicken around until it is covered with the marinade and then let it sit in the refrigerator to marinade for 1-4 hours.
Preheat your grill to 500 degrees and then grill the chicken for about 15 minutes or until the chicken is cooked through. Grill times will vary based on temperature of the grill and size of each chicken breast.

This is just my kind of dish. Sadly I never seem to have much success growing cilantro or coriander as we call it in the UK. It always seems to go straight to seed. so I will have to buy a bunch to make this. Thank you for lining to #CookBlogShare
